This week, The Pavilion Performing Arts Centre welcomed Sutherland’s newest epicurean destination into performing arts with the opening of Squiseato, an all-day artisanal restaurant-cum-café-cum-bar.

Catering to daily commuters, the local community, and performing arts enthusiasts, Squiseato offers an array of choices, ranging from a quick coffee and fresh pastry to an evening aperitivo and pasta-forward menu, perfect for reenergising or enjoying a pre-theatre meal.

Inspired by the culinary favourites of Italy and Europe, Squiseato harmoniously combines this with the freshness of Australian produce.

Patrons can savour authentic pasta dishes, timeless European classics, tasty snacks, curated selection of baked goods, and a breakfast menu served until 3.00pm. Barista made coffee made with beans supplied by The Little Marionette is available throughout the day.

Derived from Italian and Spanish origins, Squiseato is a linguistic fusion symbolising the essence of exquisite dining Italian style. The Squeasito concept is from the creative mind of Managing Director Anthony Whitehouse, who brings with him three decades of experience in the restaurant and catering industry. With two accolades under his belt from the 2022 National Restaurant and Catering Awards for Excellence and a successful transformation of a struggling eatery into a Michelin-starred flagship restaurant, Whitehouse is excited about his latest collaboration with the Pavilion Performing Arts Team.

Mr. Whitehouse expressed,

“The Pavilion Performing Arts Centre team’s commitment to enhancing the customer experience resonates with me. It represents the latest and most exciting development in Sutherland, driven by a shared desire to deliver outstanding experiences, whether it’s through exceptional musical performances, theatre productions, or culinary delights.”

He elaborated on how Squiseato embodies the novel dining direction in the area, stating,

“Our menu thrives on freshness, affordability, and constant evolution. We’ve consciously chosen to keep the menu dynamic, continuously surprising our patrons and ensuring each visit is met with awe and excitement. Our dedicated team is renowned for their service excellence and will take dining experiences to new heights.”

Squeasito will be a welcome addition to the newly renovated Pavilion Performing Arts Centre, which opened in January 2023 as an initiative of Sutherland Shire Council.

The Pavilion’s Executive Director Mike Harris says,

“Over the past year, The Pavilion Performing Arts Centre has been excited about the opportunity to revamp and expand our culinary offerings for our arts patrons as well as curious locals. We are thrilled to join forces with Create Catering and the Squiseato team within the venue to provide the highest quality in entertainment and dining.”

Squiseato debuted on 8th January 2024, marking a new culinary destination for Sutherland’s premier entertainment hub. Currently open every day of the week, and soon for dinner after the Australian Day Long Weekend, this artisanal eatery promises to become a beloved local dining destination.
